Wonky and French sourdough at Montville Market!
Showcasing local produce of the hinterland area, the Montville Market is thrilled to have two local organic sourdough bakers alternating at their monthly markets.
This month Katie Faulkner of the ‘Wonky Loaf’ will bring an array of organic sourdoughs to the market.
A Palmwoods parent of three hungry boys, Katie, originally from Liverpool UK, began experimenting with baking five years ago, after enrolling in a short course in sourdough technique.
Katie became fascinated with the process which required a lot of patience, nurturing and love. She refers to her sourdough culture as her “baby” which like all babies needs regular feeding and a stable, comfortable temperature to thrive.
After much experimentation with different flours and ingredients Katie has come to a point of ‘wonky’ perfection and her sourdough loaves must be up there with the best.
She is non-compromising in her sourcing of the best quality ingredients, recently discovering the Gunnandale Mill in NSW that both grows and mills its organic wheat.
Katie explains that the fermentation process of sourdough, when done properly, sees the protein in wheat broken down to a much more digestive-friendly state.
Katie’s generous nature saw her turn a recent disaster, when her temperature setting failed leaving a batch of sourdough flat and despondent, into a positive. Katie made the bread batch up regardless, baked the breads into flattish loaves and delivered them to a homeless shelter in Nambour where they were gratefully received and enjoyed.
The range includes a traditional loaf, a seedy loaf, a kalamata olive loaf and a divine spiced fruit loaf, made with organic fruits pre-soaked in tea, making the bread tangy and moist. (Ed note: I tried this for the first time last week and it is the best fruit loaf I have ever tasted!)
Montville’s April market welcomes Bernard and family, from Crystal Waters Bakery with organic sourdoughs and pastries with a French twist.
