Black licorice or Dutch licorice as it is often referred to, is a taste sensation created in Northern Europe.
It is no wonder licorice is most commonly associated with the Dutch – they are the highest consumers in the world at 4 ½ pounds per year with a market value over $225 million.
While people enjoy licorice as a treat it has also long been considered to have medicinal qualities and was used as a remedy for sore throats and coughs in ancient Rome, Egypt and China. The saltiness most often comes from ammonium chloride or salmiak, which is a common ingredient in cough medicine. It was a British pharmacist in the town of Pontefract in 1760 that while trying to make cough medicine more palatable, added sugar to the licorice root and created the sweeter style of licorice. High quality licorice is made with real licorice root extract and is blended with salt or a sweetener to make the wide range of flavours and styles available.
