At the Anvers chocolate factory in Tasmania they hand make superb Belgian-style truffles. Their many flavours include vanilla and peppermint and all are free of any preservatives. Available in gift boxes or singly from the glass counter. If you get the chance, visit their museum of chocolate and learn how chocolate came to be in the form we know it today. The museum takes you on a journey from the Aztec Indians, to when chocolate was only consumed as a liquid in the 1700’s, on to Henry Nestle who mixed the chocolate with milk, to the chocolate we know today.
The modern chocolate industry came to life back in 1828 when the invention of the cocoa press made it possible to extract the natural fat from cocoa beans. Experimentation among chocolate producers in France led to the development of ganache, which is the center core of the modern truffle. The Ganache was an ultra-smooth combination of solid chocolate and cream that had a velvety, liquid-like texture. Chocolate truffles began to be made using this confection, and were often flavored with other ingredients such as dark or white chocolate, cocoa powder, or almonds or other chopped nuts.
To savour truffles in the height of their aroma and smoothness, place them at an ambient temperature of 20C, one hour before serving. Shelley
